Alessandro Utini, President of the Protection Consortium, underscores, “For several years now, we’ve navigated unpredictable and highly dynamic macroeconomic and geopolitical landscapes, continuously testing the resilience of our production entities. Producers have grappled with unprecedented cost escalations and a constrained supply of raw materials, aggravated by animal health concerns. Simultaneously, consumers, grappling with inflation, have leaned towards generic and more budget-friendly cold cuts. Against this backdrop, the supply regulation plan emerges as a tool of strategic significance.”

The plan is slated to remain in force until the conclusion of 2026. To effectively bolster production levels, the pivotal role of market development abroad cannot be overstated. The prominence of Prosciutto di Parma PDO in foreign markets, particularly in the USA, is escalating. Currently, the Consortium is actively participating with its booth at the Winter Fancy Food Show 2024 in Las Vegas.
