Mozzarella di Bufala Campana PDO will be showcased also at breakfast at Tuttofood 2023, the international food exhibition scheduled in Milan from May 8 to 11. With a menu dedicated to breakfast trends, the protection Consortium aims to encourage new consumption occasions thanks to the versatility of buffalo mozzarella in the kitchen.
Inside Hall 4P, stand L07/M10, every day Chef Giuseppe Daddio from “Dolce&Salato” cooking school in Maddaloni (Caserta, Campania) will interpret buffalo mozzarella for breakfast, also using Ricotta di Bufala Campana PDO. Among the creations, a special pancake with buffalo mozzarella, a Pasta di Gragnano PGI migliaccio with Ricotta di Bufala Campana PDO, and buffalo milk salted caramel stand out. Mediterranean flavors will be on display, starting with the fresella made with buffalo mozzarella and crispy Pasta di Gragnano PGI.
The synergy between the Consortia for the protection of Mozzarella di Bufala Campana PDO and Pasta di Gragnano PGI will be confirmed at Tuttofood, as they will share exhibition space and many initiatives. Also scheduled for May 10 is the celebration of the 30th anniversary of the PDO designation recognition for buffalo mozzarella. During the “Happy Birthday Bufala Campana!” event mozzarella lovers will celebrate the occasion.
“Mozzarella di Bufala Campana PDO is a modern product that meets the needs of consumers, changing tastes, and the quest for healthy lifestyles,” says the Consortium’s President Domenico Raimondo. “That is why we will offer it right from breakfast, reflecting on the characteristics of a cheese that is fully part of the UNESCO World Heritage Mediterranean Diet.”
