The Consortium for the Protection of Pecorino Toscano PDO has been working for the last two years to put environmental, economic, and social sustainability at the center of production. A few days ago, the first 100 percent recyclable pack of the famous Italian cheese was presented by the Busti dairy. “This is a concrete step towards sustainability” – says Andrea Righini, director of the Consortium.

“For our family and our employees, sustainability and respect for the environment are fundamental principles” – says Stefano Busti, head of Caseificio Busti (founded by his father Remo in 1955). His company was the first to propose this project, carried out in close collaboration with copacker All Food, which handles the cutting and packaging of the product.

“In the last year – says Busti – due to the coronavirus emergency consumption has shifted towards pre-packaged products and we wondered how much more plastic we would use to package our cheese. Not wanting to contribute to the pollution of the planet and not finding anything satisfactory on the market, we believed in a new type of packaging produced almost entirely in paper. For us, it’s an important new step towards a totally sustainable supply chain.”
