Italy’s charcuterie goes one step further for transparency and traceability

Transparency, identification and traceability throughout the entire production system of Prosciutto di San Daniele PDO and Prosciutto di Parma PDO have been reinforced thanks to the adoption of a fully computerized system (Registro Italiano Filiera Tutelata – Protected Chain Italian Register) which represents the backbone of the new control plans put in place since the beginning of 2020.

The Pork Meat Chain Report project has been realized thanks to the will of the protection Consortia, with the collaboration of all operators and associations representing them and the cooperation and sharing of information between the certification bodies: CSQA (Prosciutto di Parma PDO) and IFCQ (Prosciutto di San Daniele PDO). For the first time, the complete information on the charcuterie production chain with a Geographical Indication denomination is made public. It is an act of transparency towards consumers and stakeholders, and the result of an important evolution process that began on January 1, 2020 with the approval of the new control plan by the Italian Ministry of Agriculture.

THE NEW TRANSPARENCY AND TRACEABILITY SYSTEM IN NUMBERS

The new system is the result of a rigorous selection and control process, which involves over 3,913 recognized operators (farms and slaughterhouses). it can be summarized in the following numbers for the first six months of 2020: 5,238,631 branded pigs, 3,636,825 pigs slaughtered in compliance with the system, and 5,326,060 pig thighs approved for the production of salumi and meat products with a Geographical Indication denomination.
