“As one of Gualtiero Marchesi’s last pupils at Alma (the most renowned center for advanced training in Italian Cuisine and Hospitality internationally), I’ve dedicated my career to pushing the boundaries of culinary excellence,” says three Michelin star Chefs Matteo Rossatto. “After honing my skills in renowned Italian kitchens, I embarked on a French adventure, working alongside culinary giants like Alain Ducasse.”
It was in the heart of French gastronomy that I rediscovered my passion for bread-making and developed a unique approach to cooking: blending classic French techniques with the vibrant flavors of Italy. My cuisine celebrates the simplicity of quality ingredients, like slow-cooked trota di fiume or Bresse chicken, infused with Italian touches such as Pantelleria capers or Amalfi lemons. I’ve even introduced Italian pasta dishes to my French clientele, proving that innovation can thrive even in the most traditional of settings. Then there are the anchovies from Cilento and the colatura d’alici.
As a proud Piedmontese, I’ve won over diners with my Ravioli del Plin (pictured) and my take on vitello tonnato, a revisited classic. The next step? Introducing a pasta dish to the menu. Because despite having an international clientele, it’s the local regulars who set the trends. My “gentle revolution” aims to shift the focus of French cuisine towards a more delicate, healthier approach, rich in vegetables. This revolution extends to simple gestures like using Taggiasca olive oil as a condiment or chicken fat (a local specialty) in classic Ligurian focaccia.
I believe in a culinary approach that respects tradition while embracing innovation. The fusion of Italian and French cuisine has led to the opening of the first Italian restaurant in France under the Georges Blanc name. The reopening of Saint Laurent in Mâcon offers a unique dining experience, showcasing the best of both Italian and French cuisine. With a menu featuring classic Italian dishes like vitello tonnato and Milanese-style cutlets, we aim to introduce Italian flavors to a wider audience. Located in a more relaxed setting compared to Paris, our restaurant offers a genuine and authentic Italian dining experience.
