Anticipating a surge in holiday orders, Culatello di Zibello PDO is positioned to command 40% of the annual sales, according to an announcement from the Consortium for the Protection of this iconic Parmesan cured meat. Representing 23 manufacturing entities, the Consortium reveals that Culatello di Zibello PDO achieved a record-breaking production of 102,591 pieces in 2022, with projections for 2023 standing at approximately 80,000 pieces. Concurrently, the production of sliced product trays has seen a notable uptick, exceeding 100,000 kilograms.

Romeo Gualerzi, President of the Consortium Culatello di Zibello PDO, reflects on the previous year’s performance amid the pandemic, stating, “We depleted reserves due to an unprecedented surge in demand. Consequently, the current production levels are commendable. These impressive figures provide a solid foundation, and we aspire to further augment them in 2024. The sliced product segment has also demonstrated robust growth, reaching 877,432 trays and over 100,000 kilograms of Culatello by September. As we approach the imminent holiday season, where we are set to capture approximately 40% of annual sales, Culatello di Zibello PDO remains a highly sought-after gift, with orders mirroring the robust demand observed in 2022.”
