Last year was a complicated year for Bresaola della Valtellina PGI. Total production from the main 16 certified companies reached 12,607 tons (-8.78% on 2019). A little more than 35,000 tons of raw material (90% of which was cut from the tip of the hip) of selected European and global origin were sent to the production of Bresaola della Valtellina PGI. On the consumption front, which has been gradually expanding for the last 20 years, the sector reached a total value of 454 million euros (-7.59% on 2019).

Exports account for 7% of total production, for a value of 18,532 million euros. More than 882 tons of Bresaola della Valtellina PGI were exported, 72% of which to EU countries and 28% to non-EU countries. According to the protection Consortium, at the basis of the reduction in volumes there is also the limitation of the cutting counter in order to limit close contact with customers within supermarkets. Sales of trays, already predominant, grew in absolute terms (+2.3% on 2019) with 6,090 tons, equal to 50% of the total production of Bresaola della Valtellina PGI.

We are redefining our strategy and lines of action by paying more attention to the territory and its enhancement without forgetting sustainability” – says Franco Moro, president of the Consortium for the Protection of Bresaola della Valtellina PGI. “We have intensified the commitment to use all available Italian meat, recording an increase of 17% of this kind of raw material compared to 2019.”
