After the restyling by Baldauf Catton Von Eckartsberg Architects of San Francisco, Volti’s, the Italian restaurant of the luxury Shangri-La Hotel in Bangkok, re-opened in December 2016. The design emphasizes a warm atmosphere of comfort, relaxation and functionality, says Phillip Taylor, executive sous chef from Melbourne who, thanks to an extensive history in well renowned restaurants throughout Europe and Asia, has brought a broad knowledge of Italian cuisine to the experienced team of the Volti’s kitchen. The contemporary and vibrant interior in soothing silky cream can accommodate 154 guests, separated into two different zones on three levels: The main dining area is located on the second level, whereas the dining area in lower level has an access to an outdoor terrace for dining and chilling out. On the first level, instead, a comfortable lounge is situated next to the stylish beverage service bar where guest can enjoy signatures dishes. In the rich food scene of Bangkok, Volti’s stands out for its approach that puts food – literally – at the center of the experience: the main dining area, in fact, houses an open kitchen and a multi-purpose oven for roasting, grilling and pizza and bread baking. Our ambition is to deliver a unique dining experience accompanied by an air of warmth and familiarity. That’s why the kitchen itself is part of the restaurant concept and all different cooking methods are done live amongst the guests.
The menu
Coming to the menu, the restaurant offers a range of modern Italian dishes both à la carte and set menus. The selection includes seafood, chicken, veal, vegetarian entrees and pasta. For Mr Taylor and his team, the biggest challenge is sourcing the best ingredients: We work very closely with suppliers throughout Thailand and abroad, to ensure we are receiving top quality ingredients which are the basis for our excellent food. We have different local suppliers who deliver on a daily basis the freshest ingredients from the farms and fields, although during the raining season there is the possibility to receive inconsistent quality of fresh products. Seasonal ingredients from Italy are the most difficult to get: Especially when it comes to receive them on time and with the right quality, through the long way of delivery. The clientele of Volti’s is a mix of locals and international guests who, in particular, appreciate dishes such as Lobster Linguini, Marinated Octopus, Burratina Pugliese, Roasted Seabass Salicornia and Sirloin Wagyu Beef Tagliata. Our clients are very attentive to the quality of our ingredients, therefore bio growth and hormone free products have a prime position in their choices.
Top Italian wines rule
Coming to the wine list, as a pioneer in the international food and beverage scene, Shangri-La Hotels and Resorts makes no compromises on its wine offerings. Our team of passionate wine experts is committed to bringing the world’s most splendid and alluring wines to the tables of our hotels. We aim to provide our client the most diverse range of wines, with a selection from artisanal and emerging boutique wineries as well as well-established and respected producers from wine regions around the world. Amongst the labels available at Volti’s there are Prosecco Follador Extra Dry Gold, Rosé Sangiovese Santa Cristina, Orvieto Classico Antinori, Centine Castello Banfi, Merlot Collavini and Le Volte Ornellaia. Our wine list is our humble homage to those vignerons and winemakers who bring us the most genuine and delicious drinks that make the world more beautiful. The clientele is a mix of international and locals: Having been already exposed for years to a variety of food in Bangkok, Thai guests are generally not new to Italian food and wines. For those not well acknowledged about it, our staff can explain and suggest dishes and if necessary pair wine and food. A part from periodic wine testing events and seasonal food tasting, aficionados enjoy extra rewards: The Table program from ‘Golden Circle’ gives access to exclusive offers and instantly redeemable rewards when you dine with us. Looking ahead, the staff is working to add a new element: Delicious, authentic cuisine with warm attentive service has always been our focus at Volti’s, but we plan to grow this concept with the addition of ‘Sustainable Food’. This means that ingredients we are using come from a plentiful source, they do have a negative impact on natural ecosystems and the global environment, ends Taylor.
