Bauli, the Italian confectionery giant, has secured a place for its century-old sourdough starter, Futura, in the prestigious Sourdough Library at the Puratos Institute in Sankt Vith, Belgium. The inclusion underscores Bauli’s commitment to balancing tradition with innovation, safeguarding the cultural heritage behind its iconic products.

Founded in 2013 by Puratos, a global leader in baking, patisserie, and chocolate, the Library is the only institution dedicated to preserving sourdough cultures worldwide. It serves as both a scientific repository and a cultural archive, advancing research into natural fermentation while protecting biodiversity.

Futura, refreshed daily using methods dating back to Bauli’s origins, lies at the core of every product the company makes, imparting the distinct fragrance, softness, and quality synonymous with Made in Italy. Its entry into the Library ensures its survival as a symbol of artisanal excellence.
