In 2021, the Consortium for the protection of Salame di Varzi PDO never expected to face such a difficult period for the second time in a row. Despite this, production, turnover, and sales grew. Salame di Varzi PDO reached, in fact, total production of fresh raw material of 671.5 tons, equal to 703,289 salamis, with an increase of +14% and +11%, respectively, compared to 2020. The value of turnover was around €7,252,740, growing by +20% compared to 2020. The export share was 17 tons by volume (+15.4%). The main foreign markets are Belgium, France, Luxembourg, and Switzerland.

“The excellent results obtained in 2021 by Salame di Varzi PDO confirm the constant growth trend of recent years – says the President of the Consortium Fabio Bergonzi – and we are proud as they are much better than the trend of the deli sector. This means that the work done by the Consortium to promote the product has paid off, making it more and more appreciated by an ever-growing segment of consumers fond of high-quality cured meat. Moreover, there is good potential for further growth in terms of quantity and quality.”
The growth in sales of pre-sliced salami in pre-packaged trays was also confirmed. About 558,572 trays were produced, up +23% compared to 2020. This shows how this kind of service continues to meet the favor of consumers, as it combines high quality and taste with the practicality of use and longer shelf life.
