The traceability system of Mozzarella di Bufala Campana PDO is unique in Italy and in Europe. It is able to guarantee that the raw material used for the production of buffalo mozzarella is 100% fresh whole buffalo milk, coming from buffaloes bred only in specific areas of Italy which are the ones foreseen by the PDO specifications.
This traceability system is the result of the joint work of the Istituto Zooprofilattico Sperimentale del Mezzogiorno (Zooprophylactic Institute of Southern Italy), the Italian Ministry of Agriculture, DQA Certifications, and the Consortium for the protection of Mozzarella di Bufala Campana PDO.
The system is entirely based on an IT platform. Since 2014, all players in the buffalo mozzarella supply chain who in any capacity come into contact with the raw material have to record what has been produced, transferred, or processed. A completely web-based and cross-platform system is used, which is easy as users do not have to install any software on their computers. All they need is an internet connection and a browser.
The platform has been equipped with a “check-and-trace” system designed and built for control bodies. A further added value is special alerts that suggest any discrepancies due to lack of or not punctual data entry, or inconsistencies between the number of milked buffaloes and primary and secondary production throughout the year.
