Ca.Form, regionalisation makes all the Difference

The Italian dairy company based in the Northeast of the country presents its innovations in the production of Asiago PDO and Montasio PDO cheeses
Ca.Form, regionalisation makes all the Difference

Active for many years in the production of typical PDO cheeses characterized by a clear regional origin (Northeast of Italy), Ca.Form Group is known mainly for its Fior Di Maso and Latterie Venete brands.

Ca.Form processes about 160-170 tons of 100% Italian PDO milk per day for the production of Asiago PDO and Montasio PDO cheeses. For some years now the company has begun to export these cheeses abroad, also outside EU boundaries. The stand of Ca.Form at Anuga gave a sense of Italian typicality, explaining how these cheeses can be used at various times of day: aperitifs, pizza, desserts or cooking.

CHEESE & WINE: NEW PRODUCTS FOR CA.FORM

During Anuga, Ca.Form presented new products and packaging solutions. In its cheese factory in Vedelago, for example, the company produces a Latterie Venete brand cheese aged in Prosecco. Thanks to the collaboration with the Consortium for the protection of Prosecco PDO, the company has obtained the authorization to declare on the label that the aging is made with Prosecco PDO. The range also includes another cheese, called “Sinfonia al Vino Rosso”, aged in red wine, a cabernet from the production area of Ca.Form, which gives the cheese a particular perfume. The company offers Asiago PDO in all ages, and medium or seasoned Montasio PDO.
