Sustainability drives the growth of Prosciutto di San Daniele PDO

The Consortium for the protection of Prosciutto di San Daniele PDO is celebrating the 60th anniversary since its foundation. And it does so by focusing on the issue of sustainability. The goal is to commensurate the economic and social system with greater attention to the environment and ethics.

In the last decade, the supply chain of Friuli’s famous ham has been characterized by constant innovations, ranging from the modification of specifications to the introduction of a digital tracking system on each tray of pre-sliced ham. As well as the use of a Consortium plant for the pre-treatment of wastewater from the ham factories, and the collection and treatment of spent salt from production for reuse in the tanning industry – or as road de-icing.

ENVIRONMENTAL PROJECTS FOR 2022

In the future – says Mario Emilio Cichetti, Director of the Consortiuma proper balance will have to be found between the need to produce and ethics towards the environment and animal welfare, thus generating an improvement in lifestyles. In 2022 we will launch important new initiatives, mainly of an economic-environmental nature. Such as the strengthening of facilities for the recovery and reuse of salt, the enhancement of product quality, low environmental impact, and respect for the supply chain. The protection of the territory is confirmed as a crucial element, as in order to continue to produce a high-quality product the place of processing must also be high-quality”.

ETHICAL MANAGEMENT OF RESOURCES

Giuseppe Villani, President of the Consortium of Prosciutto di San Daniele PDO, underlines that sustainability is the central theme that the Consortium is pursuing: “It is not just about the environment, but also respect for the people, and correct use of facilities. As well as ethical management of resources, in respect of our consumersand the territory. My wish for all our members companies is that they continue along this path”.
