After visiting Graz in 2019 and Vienna in 2020, the gourmet appointment dedicated to Austrian foodies made its last stop in Salzburg. The “Nice to Eat-Eu” project dedicated the month of July to Mozart’s hometown, to offer tastings of Italy’s Piave PDO cheese in some selected restaurants. Chefs proposed their personal interpretation of this typical Italian cheese with original and unpublished recipes.
Thanks to the European promotion, the Consortium for the protection of Piave PDO – after having already tested the response of the press and the public of decision makers in the food sector with tasting dinners able to convey the values, tastes and characteristics of this European excellence – has decided to further deepen and spread the brand by weaving a network of partnerships with some of the most influential chefs of the Austrian city.

RESTAURANTS AND RECIPES
Six restaurants were the protagonists of the project, and just as many dishes were studied to exalt all the flavors of Piave PDO cheese in the best possible way, included on the menus for 30 days.
From first courses to desserts, here are the delicacies that have conquered the palates beyond the Alps: For Trattoria da Pippo, paccheri with Piave and Bronte pistachios; Esszimmer created a creamy Piave PDO caramel; Paradoxon amazed its guests with Piave PDO cheese with rye, green tomato jam, soy butter mayonnaise, romaine lettuce, rhubarb and raw artichokes; Marc’s Restaurant Bar put gnocchi with green asparagus, Piave, vegetables and venison morsels on the menu. Homemade lasagna with Piave PDO was presented by Sapori del Sud restaurant, while Sempre delighted its guests with tortelli with foie gras and caramelized figs with Piave flakes and truffle.
INTERNATIONAL AWARDS
The undisputed star of the 2021 Salzburg recipes was one of the most popular Piave PDO references: Selezione Oro, a multi-awarded international excellence. Among the latest awards received we can find the Superior Taste Award – 3 stars at the International Taste & Quality Institute (iTQi) in Brussels (sixth consecutive year), and Best Italian Hard Cheese at the International Cheese & Dairy Awards in Nantwich (UK).
