Piave PDO cheese conquers Wien, together with some of its most prestigious restaurants, thanks to the Nice to Eat-EU project. The protection Consortium has decided to further deepen and spread this brand through excellent collaborations with some of the most influential chefs in the Austrian capital.

With ad-hoc recipes, tastings, and press dinners the Nice to Eat-EU project aims to achieve consensus and appreciation. As it had already happened in Graz in 2019, when guests tasted a dinner based on Piave PDO on wonderful dishes decorated with the first-ranked image of the 2019 Nice to Eat-EU Contest, aimed at all the food bloggers in the country.

NICE TO EAT-EU WIEN IN DETAILS

The project is underway in Wien. It started some weeks ago with tastings at restaurants’ tables and now it transformed into “good delivery”, involving the most important chefs in the city. Each of them proposes its own personal interpretation of Piave PDO cheese, inserting it in original and brand new recipes. Eight restaurants have joined the project: Cucina Cipriano, Altenberg, Cafe Restaurant Leto, Restaurant Marks, Trattoria Toscana La No’, I Carusi, I Terroni, and Osteria del Collio.

The undisputed protagonist of these Austrian recipes is one of the most appreciated Piave PDO references: the award-winning international excellence Selezione Oro. Recently it received the Superior Taste Award – 3 stars at the International Taste & Quality Institute (iTQi) in Brussels and the Best Italian hard cheese at the International Cheese & Dairy Awards in Nantwich (UK).

THE RECIPES

  • Cucina Cipriano will insert in its menu purple potato gnocchi with Piave PDO fondue and black truffle chips;
  • Altenberg will propose rustic polenta with Piave PDO and Refosco sausage sauce with chanterelles;
  • Cafe Restaurant Leto will delight its guests with mushrooms stuffed with Piave PDO;
  • Restaurant Marks will offer fillets au gratin with Piave PDO;
  • Trattoria Toscana La No’ will serve calamari stuffed with Piave PDO and black cabbage with crispy pumpkin;
  • I Carusi will delight customers with flour dumplings with Parmigiano Reggiano PDO and Piave PDO;
  • I Terroni will try their hand with orecchiette Piave PDO and scallops;
  • L’Osteria del Collio will propose Risotto with radicchio and Piave PDO.
