For the three-year period 2021-2023 Prosciutto di San Daniele PDO will benefit from a new production and supply regulation plan. It is a strategic tool put in place by the protection Consortium to balance the supply linked to the demand for this Italian excellence.

According to the Consortium, the new production plan has an important strategic value for the development of local districts and the care and protection of the producers’ interests. The Consortium has adopted a supply regulation system since 2014, aware of its potential positive impact on the supply chain.

In 2020, Prosciutto di San Daniele PDO production was negatively affected by several factors. Starting with the Covid-19 pandemic which – between February and April, and also in the autumn – has significantly slowed down production. The second half of the year, despite a recovery in production, was not enough to close the gap caused in the first half of 2020.

THE GOALS FOR 2021

The production target for 2021 is approximately 2,7 million hams, in line with the break-even point for the three-year period 2021-2023 – which calls for a maximum limit of 2.8 million hams per year.

In 2020, production of Prosciutto di San Daniele PDO decreased by 1.2% compared to the previous year, setting the production quota at 2,54 million hams.
