The demand is on the rise, thanks to the growing trend of international celebrity chefs endorsing quality culinary ingredients

Over the last year vinegar exports have been thriving, which is proof of high product quality and an ability to move with the times. Balsamic Vinegar of Modena is doing particularly well. Vinegar producers Acetaia Malpighi have expanded successfully into new markets like Brazil, China, India and South Africa. “Without forgetting”, said Massimo Malpighi, chairman of the family company  “that our core business is still in Germany, the Unites States, which houses our sister company House Of Balsamic, and Japan”. Another company focussing on high-end vinegars and registering double-figure growth outside Italy is Giusti, who sell over 40% of their output overseas. “Our success is down to the strength of our brand”, Claudio Stefano Giusti, ceo at Gran Deposito Aceto Balsamico di Giuseppe Giusti tells us, “as well as certain international accolades we have received and the growing trend of international celebrity chefs endorsing quality culinary ingredients”. Germany and the Usa are key end markets for the Gino Toschi brand, where they have seen bid successes for their high-end products like Gemma Nera, balsamic glazes and dressings. “Japan has real potential as a market”, confirms Francesco Toschi, director Acetaia Gino Toschi. “Here demand for this typically Italian condiment is growing. Overall we are seeing increasing demand for Balsamic Vinegar of Modena IGP based glazes and dressings”.
