Parmigiano Reggiano is the cheese with the longest ‘sustainable’ maturation in the world. A sign of quality certified by the World Cheese Awards, the largest dairy sector competition in the world to be held next October 17 to 20 in Bergamo (Progetto Forme). On the occasion of the 31st edition, a new category is to be created for this product: “Over 40 months Parmigiano Reggiano”, a record seasoning among the over 150 categories of the competition.
“We are proud but not surprised, as it is known that some Parmigiano Reggiano wheels can be aged for 8, 10 and in some cases up to 20 years. Our cheese is natural and made without additives or preservatives: it is all about the quality of the milk and the skill of cheese-makers. In Bergamo, the Parmigiano Reggiano National Team will be present in every category (18, 24, 30 and over 40 months of seasoning). Moreover, we represent the most awarded PDO cheese in the world,” says Nicola Bertinelli, the president of the Consortium for the protection of Parmigiano Reggiano.
THE BIGGEST NATIONAL TEAM AT WORLD CHEESE AWARDS SPEAKS ITALIAN
The Parmigiano Reggiano Italian National Team will compete at the World Cheese Awards in Bergamo with what is announced as the largest team in the world that has ever participated in an international competition.
Among the dairies that will attend the World Cheese Awards 2019 there will also be, for the first time, the only school that produces Parmigiano Reggiano: the Agricultural Company of the Institute of Higher Education Lazzaro Spallanzani from Castelfranco Emilia.
