After having officially obtained the PDO trademark, Mozzarella di Gioia del Colle can finally count on a Consortium that certifies its origin and protects its quality.

Composed exclusively by dairies and milk producers, both single and associated, operating in the production area the Consortium has been established with the aim of safeguarding and promoting this extraordinary specialty, gastronomic and cultural heritage of Puglia and Italy, all over the world.

THE FEATURES OF A UNIQUE PRODUCT

Besides having a centuries-old tradition, Mozzarella di Gioia del Colle PDO is famous for the taste conferred by the milk and the use of whey grafting in production. It is a delicately acidic taste with a pleasant fermented aftertaste.

The raw material is produced exclusively from selected breeds of dairy cows, which graze freely among the typical dry stone walls of the Apulian countryside and are guaranteed a healthy and balanced diet made up of noble raw materials coming for 60% from the PDO’s production area.
