The first assessment for changes in the Prosciutto di Parma PDO’s product specification has been positively concluded by the Italian Ministry of Agriculture. Now the proposal – originally submitted by the protection Consortium – has been sent to the European Commission.

We want to improve the quality of our product, making it competitive on the market and consistent with the new demands of consumers” – said Vittorio Capanna, president of the Consortium. “Our supply chain has understood the importance of updating some of the product specifications.”

The new product specification has been modified at all levels of the renown ham’s supply chain, ranging from the characteristics of the raw material to the finished product (processing method, weight and minimum maturation extended to 14 months, etc.).

The new product specification, the new control plan and the recent adoption of the Registro Italiano Filiera Tutelata (Italian Registry of the Protected Production Chain) are the three pillars for the relaunch of the sector.
