After the new production regulations, which aim at enhancing environmental sustainability, the Asiago PDO cheese protection Consortium announces an important new step dedicated to the production balance: the new supply regulation plan for the period 2021-2023.
The new production planning starts in a positive moment for this typical Italian cheese from the North-East of the country. From January to August 2020, Asiago PDO production grew by +11.44% compared to 2019, and consumption by +5.6% in volume and +9.7% in value (GFK data). Asiago PDO Prodotto della Montagna (Mountain Product) production also increased: +12% compared to the same period in 2019.

ASIAGO PDO CONSORTIUM’S NEW PRODUCTION PLAN
In order to guarantee a long lasting balance, the Asiago PDO protection Consortium has introduced the new “Offering Adjustment Plan”, which will last three years and be mandatory for all member companies. The project aims to complete the path started by the changes in product specification with a programming aimed at the balance between supply and demand. The plan supports the commitment to strengthen the link with the territory and the choices oriented to an environmental balance – pursued with sustainable production paths, based on respect for biodiversity, using traditional production practices that pay attention to animal welfare.

The new production planning further simplifies the supply regulation mechanism by promoting the alignment between production and demand, to the benefit of both producers and final consumers, enhancing the “mountain product” and pushing for exports recovery.
