In the gnocchi (dumplings) segment, an original approach to the way of producing recipes is that taken by Il Pastaio di Brescia company for the Patarò brand. “During the last revision of our product range – explains Roberto Zampedri, commercial director of the company – we decided to study new recipes with typical local products. For example, we made gnocchi filled with mountain cheese from hay milk or with robiola from Brescia. This revisiting of the offer also allowed us to define very precise product lines – Classic, Stuffed, Kids, Compostable – dedicated to different targets. In addition to making gnocchi with only potatoes and water, we have given space to ease of use and to the environment, with the possibility of cooking both in a pan or in a pot. The packaging restyling has been designed to give it a homemade and artisan touch, as well as to convey simplicity and lightness. And we have made it even more sustainable and ecological: we were the first, after all, to create a product packaged in a 100% compostable tray.”

Exports account for about 40% of the company’s total turnover – amounting to 33 million euros in 2019 – and are constantly growing, especially in Germany, France, Spain, Switzerland, the Netherlands, the Czech Republic, the United Kingdom, the USA, Canada, South America and Australia, thanks to the success of both potato and stuffed gnocchi.
The Pastaio di Brescia was born in 1983. The company is specialized in the production of gnocchi and potato-based specialties, under its own Patarò brand and / or in private labels.
