Clai cooperative presents itself at the showcase of Cibus 2018 trade show as a group that operates on the national and international markets with different distinctive specificities, such as the selection of exclusively 100% Italian meat coming from pigs born and reared in Italy through an integrated chain. All this in the name of respect for tradition, quality, and Italian craftsmanship. Clai operates both in the cured meats sector and in the fresh beef and pork meat one, with a supply chain made up of workers and breeders.
Clai at Cibus 2018
The ‘Gruppo Clai – Meat and Cured Meats’ stand at Cibus 2018 fair is located in Hall 3 – row B 030. Today, from 16.30 to 18.30, and tomorrow from 12.30 to 15.00, is scheduled the show-cooking of chef Max Mascia (2 Michelin stars with the restaurant San Domenico in Imola). Tomorrow, from 16.30 to 18.30, tasting proposed by the expert charcuterie makers of the butcher shops of Contadino Clai. Wednesday 9 May, from 12.30 to 15.00 and from 16.30 to 18.30, show-cooking by Erica Liverani and Lorenzo De Guio (MasterChef 2015). Finally, on Thursday 10 May from 12.30 to 15.00, tasting proposed by the expert charcuterie makers of the Contadino Clai Butchers.
The two brands: Zuarina and Clai
Zuarina, a historic charcuterie factory in Langhirano (Parma), can count on centuries of experience in the craftsmanship of Prosciutto di Parma. For Zuarina, the goal for 2018 is to continue the growth trend based on its recognized quality, investments in training activities in co-marketing with customers, and communication activities. In the assortment, from the second half of the year, there will also be the Antico Rustico Zuarina, a ham made with all the ancient know-how and matured in an ancient country house near to the factory. The turnover of Zuarina in 2017 was about 12 million euros, with exports accounting for 40%. The peculiarity of Zuarina’s foreign markets approach is the high level of customers served. From luxury hotels in Dubai, to exclusive restaurants in the Principality of Monaco, to recent collaboration agreements with major Japanese chains. Clai (Cooperativa Lavoratori Agricoli Imolesi) operates in the cured meats sector, with a particular specialization in the salami sector, and in the fresh beef and pork meat one. Clai’s turnover in 2017 was 260 million euros. In the last ten years, the development of the exports sector has been continuous and constant, reaching 19% on the turnover in 2017. Clai’s brand export to over 30 different foreign countries, although volumes are mainly divided between Great Britain, France, Spain, and Germany.
