Dalter Alimentari has a new asset. The company from Sant’Ilario d’Enza (Reggio Emilia) – leader in cutting and packaging portioned and grated cheese for food service, food industry and retail – has in fact signed a partnership with a new dairy farm. It’s the Caseificio di Provazzano in Neviano degli Arduini, located in the Parma hills. That’s the third dairy farm managed by Dalter Alimentari: the other two are Caseificio Colline di Selvapiana e Canossa and Latteria Sociale del Cigarello, both in the province of Reggio Emilia. This last acquisition will make it possible to consolidate the integrated supply chain that Dalter Alimentari began to implement in 2010. Dalter’s Managing Director Alberto Viappiani explains: This new partnership is strategic as it allows us to strengthen the Parmigiano Reggiano production’s supply chain. Dalter group is growing, therefore requiring a larger quantity of high quality raw material. Thanks to this partnership our overall production now exceeds 150 Parmigiano Reggiano wheels per day.
ON THE HILLS OF VAL PARMA – Located in the southern slopes of Monte Ripa, from which it overlooks the Parma valley, the Caseificio di Provazzano was founded in 1958 as a small stock farmer’s cooperative, which used to sell milk for the production of Parmigiano Reggiano. The dairy farm has currently 10 boilers and a maturing warehouse with a maximum capacity of 1,000 Parmigiano Reggiano wheels. Every day, 10 tons of milk are processed and the daily production capacity amounts to 20 Parmigiano Reggiano wheels. The full integration of this dairy farm in Dalter’s supply chain’s model has been very fast. Also because the Caseificio di Provazzano’s cheese maker apprenticed in Caseificio di Canossa and then in Selvapiana, already an integral part of Dalter group.
