Roasting is the key world. This process, that takes about 12-14 minutes during which the substances which make up the wealth of flavours and aromas of a blend are formed, determines the colour of the coffee and it has a crucial role in developing the smell, taste, color, and texture of the product.
Illy, one of the most important Italian players in the industry, has created four of them:
1 – Medium roast, designed for those who prefer a softer flavour and aroma, in which the floral hints of jasmine and orange blossom (with a sweet aftertaste) stand out.
2 – Dark roast, suitable for those who prefer an intense flavour, with hints of cocoa and dried fruit and a very full and round aftertaste.

4- Extra-dark roast, the latest from Illy and a Horeca exclusive for now, is characterized by a process that follows a temperature profile designed to maximize positive aromas without creating negatives ones.
The result of this particular roasting process is a small coffee, about 13-15 ml per cup that meets the needs of consumers who enjoy a rich aroma and an enveloping coffee. This process also maximizes the scent of dark chocolate and toasted bread.
