The latest product innovation from Ferrari Giovanni is steeped in tradition. In times gone by it was common practice in Lodigiano to shave off pieces of cheese with a specially designed knife with a curved blade. This tradition is the inspiration behind GranSfoglia, a long and uniquely delicate slice of hard cheese that looks and feels like a particularly fine pastry. It is available in a 70g portion size, locked in special fresh-safe packaging.

The idea is to offer a product that has multiple uses, such as imaginative starters, an accompaniment to dried fruits, to enhance or decorate pasta dishes and risottos, to add flavour to a meat or bresaola carpaccio or as a finishing touch to your favourite salad.

The production method is patented and is the result of extensive research carried out by Giovanni and Claudia Ferrari into primary ingredients and cheese production methods.

GranSfoglia is currently available in the Italian Bennet and Auchan chains as well as some local shops, and has a recommended retail price of 1.90 euros. The company is planning a range of different promotional strategies to encourage consumers to try the product.

A larger size product is also being developed to target the HoReCa trade and there are also plans to launch internationally in the future.

The Giovanni Ferrari brand is already present in markets like France, Belgium, the US and Germany and it intends to expand into Great Britain, Russia and Central and Eastern European countries. It will achieve this through a partnership with the French global company Bongrain, which has already had a positive impact on the company’s export data, with sales up by 145% in 2013.
