The 2026 Summer Fancy Food Show will introduce several new initiatives designed to improve product discovery, networking, and trend identification for buyers and exhibitors, according to Bill Lynch (pictured), President of the Specialty Food Association (SFA).
Speaking with Italianfood.net, Lynch outlined a range of innovations planned for the event, which will take place in New York and bring together specialty food producers, retailers, and industry professionals from around the world.
Among the most notable additions is the new SFA Spark Pavilion, located within the show’s Debut District. The dedicated area will feature startup brands and provide buyers, media representatives, and investors with opportunities to identify emerging companies and products. “This is where buyers, press, and investors can go for early access to tomorrow’s most popular brands and products,” Lynch said.
The event will also host the Good Food Mercantile on June 28, a one-day marketplace focused on values-based brands and products aimed at conscious consumers.
Another debut feature is Fancy Bodega, a retail-inspired exhibit designed to showcase products in a walkable format. Attendees will be able to access additional information about participating companies through scannable product tags.
Lynch also highlighted ongoing investments in digital tools. The event app will include the Ask Sofie chatbot, expanded networking functions, an interactive floor plan, and enhanced search capabilities within the Exhibitor Directory.
In addition, organizers plan to incorporate football-themed activities into the event schedule, reflecting New York City’s status as one of the host cities for the 2026 FIFA World Cup. An evening watch party is scheduled for June 30.
Emerging trends for 2026
Lynch pointed to six consumer trends identified by the SFA during its Winter FancyFaire event earlier this year. According to the association, these trends are expected to influence the U.S. specialty food market throughout 2026.
The leading trend is SenseMaxxing, named the SFA’s Trend of the Year for 2026. Other trends highlighted by the organization include:

- The Appetite Reset
- Honest Processing
- Promiscuous Palate
To help attendees navigate these developments, the event app will allow users to filter exhibitors according to the trends identified by the association. “As part of SFA’s continuing efforts to help attendees discover products in new ways at our events, the Exhibitor Directory in the event app includes filters to pull up brands and booths to visit for each of the six trends,” Lynch explained.
Italian Pavilion: a cornerstone of the event
Lynch also underscored the significance of the Italian Pavilion, describing it as one of the defining features of the Summer Fancy Food Show. “The Fancy Food Show promises participants a global showcase of the newest and best in specialty food, and this promise comes to life each year in the Italian Pavilion,” he said.
According to Lynch, the Pavilion’s longstanding importance reflects the popularity of Italian food products in the U.S. market and the ability of Italian exhibitors to continually introduce new ideas and products.
“The Italian Pavilion, organized by Universal Marketing, is a cornerstone of the Summer Fancy Food Show, and has been for decades, due to both the popularity of Italian cuisine and ingredients in the U.S. and the persistent innovation and excitement that Italian exhibitors bring to the show,” Lynch said.
The Pavilion will feature live chef demonstrations, cultural storytelling, and trend-driven products, elements that Lynch believes contribute significantly to the overall visitor experience and international appeal of the event.
