The Bresaola della Valtellina PGI sector has demonstrated remarkable resilience throughout 2025, reaching a total consumption value of €502 million, a 4.6% increase compared to the previous year. While total production reached 11,947 tons—representing a slight contraction of 5.47%—the industry successfully navigated a complex socioeconomic landscape characterized by rising production costs and significant international trade barriers.

International expansion and market dynamics

A key highlight of the year is the stellar performance in foreign markets. Exports surged to 836 tons, reflecting an impressive 32.34% growth. Of this volume, 64% was directed to EU countries, with a notable 70% spike in demand within non-EU territories, particularly in the Middle East. This dynamic performance underscores the growing global appreciation for authentic Italian cured meat specialties, even as manufacturers face the structural challenge of securing raw materials amidst rigid GATT quota systems.

The impact of production costs

Mario Francesco Moro, President of the Consortium for the Protection of Bresaola della Valtellina, noted that the value growth was partially driven by necessary price adjustments. “While our sector remains solid, we are navigating a period of significant pressure regarding raw material procurement. The reliance on extra-GATT imports has become unavoidable to maintain production levels. We are looking toward the European Commission’s initiatives to revitalize domestic beef farming, though we anticipate it will take time before these policies bear fruit,” Moro explained.

New standards for quality and traceability

Commitment to excellence remains at the forefront of the industry’s strategy. As of 2025, the CSQA-certified producers have implemented updated regulations in the production specification. These changes mandate stricter traceability protocols, requiring precise documentation of all supply chain flows—from raw material intake to the final packaged product. Furthermore, all operators, including processors and slicers, must now register with the governing body, ensuring total transparency and upholding the integrity of the PGI designation.
