Campanian Consortia Unite at Tuttofood 2026

Mozzarella di Bufala Campana PDO and Pasta di Gragnano PGI Consortia join forces to narrate Italy’s culinary identity—now recognized as UNESCO heritage—through tradition, innovation, and immersive gastronomy

Few symbols convey Italy’s global identity as powerfully as pasta and mozzarella. Building on this premise, the Consortium for the Protection of Mozzarella di Bufala Campana PDO and the Consortium of Pasta di Gragnano PGI will present a joint narrative at Tuttofood 2026 (May 11–14, Milan, Hall 1 – Stand R05), celebrating a culinary tradition now recognized as part of UNESCO heritage.

The collaboration between the two Consortia—among Campania’s most authentic ambassadors—returns to the international stage with a project focused on what makes Italian cuisine unique: the ability to transform iconic ingredients into shared culture, memory, and innovation.

A CULINARY NARRATIVE, PLATE BY PLATE, AT TUTTOFOOD 2026

The exhibition stand is conceived as a storytelling space where Italian cuisine unfolds through a sequence of evocative interpretations. More than a tasting experience, it is a journey across Italy, revisiting classic dishes with a contemporary lens.

Regional traditions are reinterpreted in dishes that balance heritage and creativity. Lazio is represented through Rigatone di Gragnano PGI cacio e pepe, enriched with buffalo ricotta and finished with truffle. Liguria emerges in Linguine di Gragnano PGI with pesto and potatoes, where Mozzarella di Bufala Campana PDO introduces a surprising, creamy note.

The journey continues northward: Piedmont inspires a frittatina of Anellini di Gragnano PGI with Barolo-braised beef and mozzarella, while Lombardy is referenced in Orzo di Gragnano PGI “alla milanese,” creamed with buffalo ricotta in a dialogue between pasta and risotto traditions.

At its core lies Campania itself. Pasta Mista di Gragnano PGI with potatoes and smoked Mozzarella di Bufala Campana PDO reflects the depth of Neapolitan cuisine, while a fried pacchero filled with ricotta and mozzarella, served on tomato sauce with basil reduction, offers a contemporary reinterpretation.

The result is a coherent and fluid narrative demonstrating how Pasta di Gragnano PGI and Mozzarella di Bufala Campana PDO remain living, versatile, and distinctly modern ingredients.

BRIDGING PHYSICAL AND DIGITAL EXPERIENCES

The initiative extends beyond the exhibition space through an integrated digital strategy. Selected recipes featured at the stand will also be available as video recipes on the Consortia’s social media channels, enabling visitors to recreate “the flavors of the South” at home and extend the experience beyond the Tuttofood 2026 trade show.
