Salame Felino PGI, whose production involves 14 companies in the Parma area, is becoming increasingly popular. In 2022, consumer sales increased by +5 percent compared to 2021, reaching a share of 84 million euros (source: Ecepa). Total production of Salame Felino PGI came close to 40 million euros in value last year, equal to an increase of +0.9% or 3.69 million kg.
Pre-sliced salami in trays recorded the most significant growth, both in production and sales. As of Dec. 31, 2022, there were more than 639,000 kilograms of product for slicing, equal to a volume increase of +7.3% compared to 2021. This positive figure confirms a long-term trend: in fact, volume sales of pre-sliced Salame Felino PGI had grown by +4.5% in 2021.

Export sales (177,000 kg in 2022) amount to about 5 percent of the product’s total turnover. EU countries are the main destination market, accounting for more than 80 percent of total exports.
The President of the Consortium for the protection of Salame Felino PGI, Umberto Boschi, says, “We are satisfied with the growth recorded in 2022. In the early months of 2023, production and sales levels are being confirmed despite the substantial drop in producers’ margins due to the unprecedentedly high cost of domestic meat. Price increases will thus be inevitable to maintain economic balance for producers.”
