During 2021, sales of Prosciutto di San Daniele PDO returned to pre-Covid levels, with double-digit growth outpacing the admittedly substantial increase in production.

The director general of the Prosciutto di San Daniele PDO Consortium, Mario Cichetti, says, “We totaled a production of 2.6 million pork legs, growing by + 3.1% over 2020. Sales, on the other hand, grew by +12.5%, settling for a volume over 2.8 million legs”.

High energy prices and the increase in the cost of raw materials, inflation, and the uncertainties weighing on the international geopolitical scenario are also felt in San Daniele del Friuli. “Even for ham, the higher costs of energy and raw materials affect production costs. At a time that is still so critical, it is not easy to to dump these costs on the market by increasing the final price. Fortunately, for now our sector is not suffering,” says Cichetti.
