The Consortium for the protection of Prosciutto di Norcia PGI has completed its work of changing the product specification. “The changes – explains the president Pietro Bellini – are an important step for the Consortium members after an intense work that has lasted for about a year. Through the rules of the new specification, the quality of our hams is further improved, and the Consortium structure is strengthened and better equipped for the future challenges of domestic and foreign markets.”
The new specification, coming after 20 years from the first draft, confirms the path taken by the Consortium aimed at quality, identity, safety and sustainability. The changes made to the specification allow the Consortium to align itself with the new EU policy following the EU Commission’s Farm to Fork strategy.
THE NEW PRODUCT SPECIFICATION
Through the new regulations, the Consortium wants to guarantee the “absolute transparency” of the product’s traceability towards the consumer, i.e. by affixing a metal seal on each ham, on which the initials Ctpn (Consorzio di tutela del prosciutto di Norcia IGP) and the date when processing began appear in relief. The seal is shaped in such a way that, when applied with a suitable sealer, it is irremovable.
“This identification mark – explains the Consortium – contributes both to the qualification of the raw material and to the identification and traceability both in the production and marketing stages of Prosciutto di Norcia PGI. It is a further element of product enhancement and protection for the consumer.”

DESCRIPTION
Prosciutto di Norcia PGI is a charcuterie product, raw and cured, obtained from the processing of fresh legs of heavy pigs, generally offspring of Italian Large White and Landrace sows, Duroc or other breeds deemed compatible with Italian heavy pigs.
PRODUCTION AREA
The production area of Prosciutto di Norcia PGI is located at 500 meters above sea level in the municipalities of Norcia, Preci, Cascia, Monteleone di Spoleto and Poggiodomo, all in the province of Perugia, in the Umbria region.
