For the first time, John Cabot University and Antica Pesa restaurant team up to create a model of sustainable, modern hospitality, ready for recovery after the pandemic crisis

The Italian chef Francesco Panella (in the picture above), owner of the restaurants “Antica Pesa” in Rome and Brooklyn and “Feroce” in Manhattan, defined as the “restaurateur of the two worlds” and starring in famous TV shows, has created a training project to be proposed to the students of John Cabot University. In fact, it is a challenge entitled “Hospitality For The Future by John Cabot University & Antica Pesa”.

For the first time a company linked to the world of catering and an international university collaborate, in a creative and innovative way, to create a new model of sustainable hospitality with the active collaboration of the students. “Young people – says Francesco Panellaare the new consumers and we want ideas, answers and solutions from them. Together with Beclay Agency I chose to involve John Cabot International University because their students are all over the world, and represent our ideal case study.”

THE HOSPITALITY CHALLENGE

The goal of the initiative is to devise new business models and sustainability for the restaurant industry, which is suffering a serious economic setback due to the crisis linked to the coronavirus pandemic.

Classes from the prestigious international university will have to present projects that look at the catering of the future. Technology and sustainability are the key words, two fundamental concepts to create new cutting-edge business models, in total respect of the environment. Students will have to devise the best plans to make a restaurant sustainable, involve stakeholders and communicate virtuous actions of contemporary catering through the media.

The works will be selected by a committee of teachers, and then the finalists will participate in a final online event. Winners will be chosen by the commission and Francesco Panella, and receive as a prize a personalized named tree in the “Antica Pesa” forest by Treedom. This is a platform that allows you to plant a tree at a distance and follow its growth online, directly funding local farmers around the world and bringing environmental, economic and social benefits. Winners of the Hospitality For The Future challenge will be awarded an additional prize, raffled off by Beclay Agency.
