Thanks to a recent discovery developed in collaboration with the University of Naples Federico II, Mozzarella di bufala campana PDO (buffalo mozzarella PDO from Campania) will soon be sold in new packs that will take the place of plastics and polystyrene used until now for the packaging and shipping all over the world of this typical Italian curd cheese.
THE BUFFALO MOZZARELLA PDO NEW CLOTHES
The material at the base of these new packs is eco-friendly, recyclable and less expensive than the current ones. It is called peptide, a natural protein able to bind both to the plastic material, such as a thin film or a tray, and to intercept and destroy the microorganisms present in the liquid wrapping mozzarella. “These new packs will not only increase the shelf life of buffalo mozzarella PDO, but also protect the environment – says Pier Maria Saccani, director of the Mozzarella di Bufala PDO protection Consortium. Considering that exports have increased by 20% in recent years, this new material will further facilitate the transport and distribution of this excellent dairy product.” ù
“In 2019 our production increased by 2% – continues Saccani -. Buffalo milk deliveries have exceeded 235,000 tons, allowing a production of 43,000 tons of Mozzarella di bufala campana PDO.”
