Vinegar market is enjoying increasing popularity around the world as consumers discover new ways to dress their salads, cook meals and drink cocktails. Industry analysts forecast the global market to expand at a compound annual growth rate of 6.74% in 2017-2021. Consumers have become more aware of the health benefits commonly attributed to this condiment, from lowering blood sugar and cholesterol levels to weight management. Italian vinegar – from the white and red wine specialties to the trending Balsamic of Modena – is leading this wave thanks to its renowned quality and unique taste. North America and Europe are the most important foreign markets. The versatility of balsamic vinegar for Modena coupled with its natural properties make it one of the best-selling certified (PDO, PGI) food specialties from Italy. Balsamic vinegar is the leader for exports, with 80% of it being sold across 120 different countries.

GROWING DEMAND FOR NEW NATURAL FLAVORS

Italian producers are doing more to innovate their ranges and introduce new versatile products that can be used in a variety of recipes. While its use as a salad dressing is well known, recipes that can be found online show how to mix balsamic vinegar in cocktails or use it as a glaze to pour on sweet and savory dishes. Glazes, creams, pearls – the versatility of vinegar texture can be surprising. Glazes are probably the most innovative solution when it comes to their mix of natural flavors. The latter include not only citrus (orange or lemon) but also popular flavors such as turmeric and ginger. Natural ingredients are dominant in an industry that demands quality and health, giving apple dressing an important place on the table.

BALSAMIC VINEGAR: AN INTERNATIONAL STAR

More than 90% of the production of Italian balsamic vinegar was exported in 2017. Exports value increased 2% last year and by 89% since 2010. The production of PDO and PGI product is worth one billion euros in retail value, whose valuable tradition originates from the small region between Modena and Reggio Emilia in Northern Italy.
