US consumers ask for authentic specialties

In the domestic US market, specialty food is growing exponentially and the growth of categories such as ethnic, organic and wellness is exploding Phil Kafarakis, President of Specialty Food Association (SFA), told Italianfood.net in this exclusive interview at the Winter Fancy Food Show 2018 in San Francisco. Specialty Food Association, which owns and produces the Winter and Summer Fancy Food Shows, is currently trying to implement a qualification process in its exhibitions, in order to have buyers who are real decision makers – states Mr. Kafarakis and to bring them together with manufacturers. We are also trying to have more educational programs and cooking experiences.
