During the Anuga 2025 trade show in Cologne, the Italian seafood preserves company Rizzoli Emanuelli won the Italian Food Award 2025 for its latest innovation, “Fillets of anchovies in marinated anchovies with caramelized red onions.” This award-winning product is part of a strategic shift initiated in 2020, moving anchovy products from the shelf to the refrigerator. Utilizing top-quality Cantabrian Sea anchovies, this particular line features a lower salt content and a year-long perfected recipe balancing vinegar-whitened fish with the sweet-and-sour profile of caramelized Tropea red onion.
