The Consortium for the Protection of Salame Cacciatore Italiano PDO ended 2025 on a notably positive trajectory, reporting solid growth across its key economic and production indicators.
According to certified data from the IFCQ body, total output reached approximately 4.2 million kilograms, up from nearly 3.9 million in 2024, marking an increase of 7.9%. Over the same period, overall sales rose by 5%, largely supported by particularly dynamic performance in international markets.
Exports proved to be a major growth engine, climbing 19% year-on-year and pushing the share of overseas sales to 39% of total certified output, a significant improvement from 34% in 2024. The data underscore the product’s growing international appeal and its ability to capture evolving consumption habits.
A decisive factor behind this expansion has been the success of pre-sliced, tray-packed formats of Salame Cacciatore Italiano PDO, available in 60 g, 80 g, and 100 g portions. Valued for its convenience and ease of use, this segment recorded a remarkable 47% increase, positioning itself as a key driver of growth, particularly in export markets.
Geographically, Germany confirmed its position as the leading market, with sales rising by 39% and its share of total exports increasing from 47% to 52%. Other key destinations include Switzerland, the Netherlands, Belgium, the United Kingdom, and Austria.
The UK delivered one of the most notable performances, with sales surging by 74%. This result has also been attributed to the promotional programme “The EU Fab 6 – Savour the PDO and PGI Wines and Deli Meats from Europe”, funded by the European Union. The initiative included targeted activities such as in-store tastings and direct purchase opportunities, helping to boost awareness and drive product uptake among consumers.
