The events organized by of the Consortium for the Protection of Taleggio PDO continue within the “100per100 Italian” project, created to support and spread the authentic Italian food culture in the world. Together with Taleggio’s, other Consortia of the dairy sector such as Asiago PDO, Gorgonzola PDO and Pecorino Sardo PDO’s are taking part in the events.
On July 7, a masterclass dedicated to the UK market was held with the aim of spreading information about Taleggio PDO to professionals and promoting its use according to the tastes and eating habits of British consumers. The meeting was part of a series of activities organized in collaboration with “I Love Italian Food” international network.

Considering the spread of the Covid-19 pandemic that in recent months has made it impossible for many chefs to travel to Italy to receive training, the masterclass was a valuable way to promote the consumption of Taleggio PDO in the UK market. In fact, the UK is one of the top non-EU importers of Taleggio PDO cheese. In 2020 it imported about 137 tons equal to about 20% of the total exported to non-EU markets.
On behalf of Consortium, Roberto Fulgosi spoke about the market of the typical cheese from the North of Italy, produced with milk from organic farming. Chef Francesco Bisceglie (in the picture above), Head Chef of The Ned London, explained the use of Taleggio PDO in his cuisine and how the product is considered in the British market. In particular, he focused on the versatility of this kind of cheese which allows it to be the protagonist of countless recipes.
